Build it locally mate. Can take it back if you have issues instead of sending it on a pallet just to get looked over. You will also be supporting local business in Melbourne.

You can try these guys http://dandyengines.com/services-2/ they have heaps of rep and they can do it all in house which means no sending stuff away to get machined, balanced etc.

Maybe speak to your tuner, see who they recommend.

Good relationship between engine builder & tuner would be beneficial.

I shipped my stock engine out to Atomic, mine is quiet, its down to personal choice really, I know Atomics products are second to none and specialize in just these engines, and you know everything that's going into the motor.

Would you take your engine to someone that knows absolute nothing about the I6 Turbo???

Nizpro & Dynamite, are the only ones I know off the top of my head in Melbourne that have done a few in Melbourne.

I would get the one crowd to do the lot including tuning if possible otherwise if something goes wrong they will be blaming each other.
