Haha I know I eat them cos I spit them out when I eat meat pies.

 

Meat pies aren't slow cooked though so you kinda expect there to be chunks.

Those aren't veins - those are tendons

I couldn't find much but it appears you are right. All these years I thought I was getting chunks of artery lol.

 

I guess those hollow bits are the outer part of the tendon or the tendon sheath maybe.
